
I am feeling decidedly less swiney, so I decided I needed some kitchen therapy yesterday.
And I made this completely kick-ass tomatillo salsa that is totally Plan-safe and fabulous. This stuff is so damn good. A little heat, just enough to taste it, not enough to scorch the nasal glands, fat free and fucking fabulous.
Am so making this for our next party.
Two poblano peppers
Six tomatillos, skins removed
Half of a white onion, rough chopped
Half of a green pepper, rough chopped
One fresh jalapeno pepper (seeds intact), diced
Three dried jalapeno peppers (seeds intact), diced
Two cloves of garlic, whole
Juice of one lime
Put the poblano peppers and the tomatillos on a baking sheet and broil for a five minutes. Turn everything over and broil for another three minutes. Remove from broiler and let cool until the skins and stems can be removed from the poblanos.
Put the tomatillos in the food processor. Rough chop the poblano peppers and add them to the food processor. Then pile in the onions, the green and jalapeno peppers and garlic. Squeeze in the lime juice.
Take the ingredients for a spin until well blended.
Serve with chips or veggies, or as a topping for meats, tacos or salad. Enjoy.
